Raising The Dead Cocktail


Henry Besant was a magnificent London Bartender who won lots of awards and inspired many to raise the level of bartending.

He Inspired me back in 2009 with his Pineapple Cardamom Martini when we rocked the bar at Herrie.
Unfortunately he stepped to the other side in 2003 after suffering a heart attack.

So on this Halloween we awaken him from his rest to join us for a drink made with his very own Tequila, the flavours he inspired me with and some tiki pumpkin magic.


2 Cardamom pods
1/4 Fresh Pineapple grilled
35ml Olmeca Altos Reposado Tequila
35ml Roasted Pumpkinseed infused Botran 15 Rum
20ml Medium Sherry
15ml Fresh Lime juice
20ml Spiced Agave Cordial (1:1 agave-spice tea(cinnamon, nutmeg, clove, star anise, pimento))
2 dash Fee Brothers Chocolate Bitters
top 4 dash Angostura


Muddle cardamom and pineapple in shaker.
Add the rest of ingredients and shake.
Fine strain into crushed ice filled pineapple glass.
Float Angostura bitters on top.
Garnish and serve on crumbled chocolate muffin!
